I believe the next edition should heavily take into account the many lists made of the best films of the decade. By doing so, the requirement to add several deletions arises, in particular Mulholland Drive, which has claimed its place as one of the most recognized films of the 21st century.
The additions of newer films needs to stop, too, or at least be shortened. The most recent edition alone has 30 or so movies from 2003 through 2007. Recognition of recent movies is key, but you'll be hard pressed to find someone in agreement that 30 pictures from 4 recent years deserve to stand alongside Citizen Kane and The Godfather and Vertigo. It just shouldn't happen. This is 1001 Movies You Must See Before You Die, not 900 Or So Movies You Must See Before You Die Plus Some More Recent Ones We'd Like To Recognize.
For more additions, I believe Kill Bill Vol. 1 should be changed to just Kill Bill. I'd like to see Big Fish on here, My Neighbor Totoro, Casino Royale over The Bourne Ultimatum (a revisionist vision and possibly best entry in a long-running series trumps the best entry in a short, recent series), and I'm Not There. I also think that many of your deletions should be reconsidered. If the book is to cover this decade, The Hurt Locker is a must. Avatar is a possibility since this is not necessarily a best movies list. Personally, I'd like more Pixar recognition due to the tendency of the film community to look down on animation. From 2008, Slumdog Millionaire could be the best choice. Benjamin Button, The Wrestler, and Frost/Nixon seem to follow the trend of recent additions like Apocalypto in that they're not really deserving. The Boondock Saints should be on here as well, since this is not a best movies list (if it were it should not even be considered), and it remains one of the biggest cult movies since The Shawshank Redemption.
Deletions I think should encompass many newer movies and restore older deletions. If The Dark Knight is added, Tim Burton's Batman should be gone forever since it looks like child's play by comparison. Gangs of New York, which has been supported by many previous posters, deserves no spot on this list since it is messy, bombastic, overblown, and one of Scorsese's worst films. It should not be mentioned in the same sentence as The Departed if The Departed stays.
And I agree with the next cover being Eraserhead.
